Taco Turkey Burgers & Roasted Peppers

When you’re doing a a Whole30 on a budget or you don’t have the time or desire to cook very much, ground meat should be your best friend. All you need is a seasoning blend or sauce to turn it into a delicious and super fast meal. When I’m really short on time, I buy frozen peppers; when they thaw they’re tender and still delicious. But if you have time, roasting is the way to go!

Ingredients:

  • 1 pound ground turkey

  • 2 tablespoons compliant taco seasoning (homemade or from a jar)

  • 4 bell peppers

  • 3 tablespoons olive oil 

  • Pinch of salt


Instructions:

  1. Preheat oven to 425°. Slice peppers into 1/2 inch slices, lay on baking sheet, drizzle with 2 tablespoons olive oil, and sprinkle with salt. Roast for about 22 minutes.

  2. Heat skillet to medium and add 1 tablespoon oil. In a bowl, combine turkey and taco seasoning with your hands until well combined. Split the meat into four patties. Cook in the skillet until cooked through, about 3 minutes per side. Drizzle olive oil over burger and peppers for extra healthy fats if desired. 

Servings: 4
